What is acacia gum?
Acacia gum, also called gum arabic, is the hardened sap of acacia trees. It dissolves in water into a smooth, nearly flavorless liquid, and it's used in many everyday foods and drinks to thicken them and keep them silky smooth.
Where it comes from
Acacia trees grow across the Sahel, the dry belt south of the Sahara in Africa.
The sap seeps from cuts in the bark and dries into amber drops called tears.
