What is amaranth?

Amaranth is a tiny golden seed from a tall plant with flame-colored flower plumes. It cooks into a soft, creamy, porridge-like grain with a nutty, earthy taste, and it pops like miniature popcorn when toasted in a hot, dry pan.

Where it comes from

Amaranth was a staple food of the Aztecs.

It grows in warm climates in Mexico, the Andes, India and Africa, and its leaves are cooked as greens.
