What is an artichoke?
An artichoke is the flower bud of a thistle-like plant, picked before it opens. Cooks eat the tender base of each leaf and the soft heart at the center, and artichokes are steamed, grilled, roasted or marinated in olive oil.
Where it comes from
Artichokes grow on tall, silvery plants around the Mediterranean and in coastal California.
Left on the plant, the bud opens into a violet-blue flower.
