What is chicory root fiber?
Chicory root fiber is fiber from the long taproot of the chicory plant, made mostly of inulin. The roots are chopped and soaked in hot water, and the fiber is drawn out and dried into a fine, faintly sweet powder.
Where it comes from
Chicory is a hardy plant with sky-blue flowers that grows along roadsides across Europe and North America.
Its long taproot is where the fiber is stored. Roasted, the same root becomes chicory coffee.
