What is cordyceps?
Cordyceps is a group of fungi. The kind used in foods is usually Cordyceps militaris, grown on grain or rice. Mycelium is the fine, thread-like network the fungus grows as, and when cultivated, cordyceps forms slender orange stalks above it.
Where it comes from
Wild cordyceps grows in high mountain grasslands and forests.
Today almost all of it is cultivated indoors on grain.
