What is glucomannan from konjac root?
Glucomannan is a soluble fiber from the root of the konjac plant. Mixed with water, it swells into a thick gel. It's the same fiber that gives shirataki noodles and konjac jelly their bouncy, springy texture in traditional Japanese cooking.
Where it comes from
Konjac is a plant in the arum family, grown in Japan, China and Southeast Asia for its large underground corm.
The corm is sliced, dried and milled into konjac flour, the starting point for noodles, jellies and glucomannan.
