What is inulin from Jerusalem artichoke?
This inulin comes from Jerusalem artichokes, the knobbly tubers of a sunflower relative. Inulin is the fiber the plant stores in its tubers instead of starch, and here it's washed out, dried and milled into a fine, lightly sweet powder.
Where it comes from
Jerusalem artichokes, also called sunchokes, grow under tall yellow flowers that look like small sunflowers.
They're native to North America and are dug up in fall and winter.
