What is Lactobacillus?
Lactobacillus is a large group of bacteria that turn natural sugars into lactic acid. They're the cultures behind many fermented foods: sauerkraut, kimchi, sourdough bread and brined pickles all get their pleasant, sour tang from bacteria like these working slowly.
Where it comes from
Lactobacillus bacteria live naturally on plants, including on the skins of fruits and vegetables.
That's why cabbage and salt alone can turn into sauerkraut.
