What is lion's mane?
Lion's mane is an edible mushroom that grows in white, shaggy cascades of soft spines, like a small waterfall or a lion's mane. Mycelium is the fine, root-like network a mushroom grows from, here cultivated indoors on trays of grain.
Where it comes from
Lion's mane grows on dead and dying hardwood trees like oak and beech in North America, Europe and Asia.
Cooks slice it and sear it in a hot pan.
