What is water-washed soy?

Water-washed soy is soy protein made from soybeans using water, rather than chemical solvents, to separate the protein from the rest of the whole bean. Soybeans are the same versatile beans used for tofu, soy milk, miso, tempeh and edamame.

Where it comes from

Soybeans grow in pods on bushy plants, mainly in the United States, Brazil and China.

They're harvested once the pods dry on the plant.
